I know there are no stupid questions but this one just might be.

Can a single Hilo perform DA and AD at the same time? Think of a mastering environment where the signal chain is: 

DAW > DA > analog processing > AD > DAW

And while we're on the subject, does the Hilo really have simultaneously two DAs? Making it capable of DA, DA, DA?

Yes to both.  You can record and play at the same time, and there are six channels of D/A conversion.  2 Line Out (Stereo)
2 Monitor Out (Stereo)
2 Phones Out (Stereo)

Each of those outputs can carry the same signal or different signals.
